Ingredients

12 slices

  • 300g flour
  • 1/3 baking powder
  • 3 eggs
  • 200g sugar
  • 150g butter
  • 600g Apple, green but the yellow/red variety
  • Juice of 1 lemon
  • Oil for shaping and greasing the pan
  • 1 pinch cinnamon

Preparation

This recipe is from "The Apple Baking Book" by Martina Blank (translation is mine and I make it using half a teaspoon of mahlep, everyone asks what's in it, it's possible to use hazelnut oil for a healthier version)

  1. Flour and baking powder are placed in a bowl.
  2. Eggs, sugar, and butter are added, knead or mix with a mixer.
  3. Apples are peeled halfway, seeds are removed.
  4. Apples are cut with a knife so they don't fall apart, for the insides to cook. Soaked in lemon juice.
  5. The cake mold is greased and the dough is poured into the mold, the top is flattened, apples are placed on the dough, cinnamon is sprinkled.
  6. Baked in a preheated 160 degree oven for 60 minutes. Consider your oven's characteristics. If it cooks fast, 150 degrees is enough.

Remove your apple cake from the oven and let it rest for a while. Sweeten with powdered sugar if desired. Serve with cream or plain. Enjoy your meal..
