Ingredients

  • Arugula
  • Walnut
  • Pumpkin
  • Half a kilo of Brussels sprouts
  • 250 ml apple juice
  • Grape vinegar
  • Lemon
  • Cooking oil

Preparation

  1. Brussels sprouts are boiled in a very small amount of boiling water with the lid off, then the water is drained.
  2. They are boiled again with 1 cup of apple juice, with the lid off, over low heat until the liquid reduces.
  3. A small piece of finely chopped pumpkin is lightly fried in hazelnut oil or olive oil.
  4. After cooling, arugula and all other ingredients are added on top as shown in the picture.
  5. Salt, vinegar, lemon, and olive oil are added.
