Iodine is an important nutrient necessary for the normal growth and development of humans and animals. It is found in very small amounts in the human body and is obtained through the food we eat and water. The majority of the iodine in our body is found in the thyroid gland and is used in the production of thyroid hormones. The thyroid gland is located in the front of the neck and produces thyroid hormones. Iodine found in nature in soil and water passes into our food. The soils of mountainous and eroded regions are poor in iodine. Foods grown in iodine-poor soils and the water in these regions contain insufficient amounts of iodine. Individuals who eat these foods do not get enough iodine. They should use iodized salt.
Which Foods Contain It?
The easiest and most effective way to increase iodine intake is to use iodized salt. Iodine is abundant in brown seaweed, kelp, samphire, and seafood; salmon, mussels, sea bream. It is found in spinach, field lettuce, and unripe green walnuts. It is also found in meat and dairy products. The highest iodine content is found in sheep's milk.

Warning: The amount of iodine in the composition of foods decreases with cooking. Since iodine is a volatile element, store iodized salt in a dark, cool, and dry place, in a dark-colored, light-proof, lidded jar where it cannot be exposed to light. To prevent iodine loss during cooking, add salt to your food after cooking is complete. The daily dose is between 0.1-0.5.
